Ingredients
  

  • 8 ounces pasta penne, rotini, or your favorite
  • 1 pound ground beef or ground turkey
  • 2 cloves garlic minced
  • 2 tablespoons taco seasoning
  • 1 cup chunky salsa or your favorite variety
  • 1 cup corn canned, drained, or frozen
  • 1 cup black beans rinsed and drained
  • 1/2 cup chopped cilantro optional
  • Salt and pepper to taste

Instructions
 

  • Cook Pasta: Cook the pasta according to the package instructions until al dente. Drain and set aside.
  • Cook Beef: In a large skillet over medium-high heat, cook the ground beef with minced garlic and taco seasoning for 5-7 minutes, until browned and fully cooked.
  • Combine Ingredients: Add the cooked pasta, salsa, corn, and black beans to the skillet. Stir gently to combine, and continue cooking for 5-10 minutes, stirring occasionally.
  • Finish and Serve: Stir in the chopped cilantro (if using), and season with salt and pepper to taste. Serve hot, topped with your favorite taco toppings.

Ensure the pasta is well-drained to prevent the dish from becoming too watery.
Adjust the taco seasoning to taste—start with the recommended amount and add more if desired.
Use lean ground beef to avoid excess grease.
Rinse and drain the black beans thoroughly before adding them to the dish.
