Taco Bell Mexican Pizza

- 8 taco size flour tortillas
- 1 lb. ground beef
- 1 can refried beans
- 1 packet of taco seasoning mix
- 1 can red enchilada sauce 10 oz.
- Vegetable oil
- 2 cups Mexican blend or cheddar cheese
- Toppings: chopped tomatoes chopped green onions
Heat some vegetable oil in a skillet over medium heat, and toast the tortillas evenly on both sides until crispy.
Place 4 of the tortillas on a parchment-lined or well-greased baking sheet.
Top each of the 4 tortillas with the refried beans.
Brown the ground beef in a skillet over medium-high heat until completely cooked through. Drain the excess grease.
Sprinkle the taco seasoning over the ground beef, and stir to combine well.
Spread a layer of the meat over the refried beans on the tortillas.
Place another crispy tortilla on top of each of the topped ones.
Spread a layer of enchilada sauce on top of each Mexican pizza, and top each pizza with the cheese.
Bake for 10 minutes, or until the cheese has melted.
Remove from the oven and top with the chopped tomatoes and green onions before serving.
