Prepare the Sauce:
In a bowl, combine all sauce ingredients and whisk until well combined. Set aside.
Coat the Chicken:
In a wide, shallow dish or pie plate, whisk together eggs, cornstarch, salt, and pepper.
Place flour in a second wide, shallow dish.
Working in two batches, coat chicken pieces first in the egg and cornstarch mixture, then in the flour, shaking off any excess. Place coated chicken on a clean plate.
Cook the Chicken:
Heat canola or avocado oil in a large skillet over medium heat.
Once hot, add coated chicken pieces to the pan using tongs.
Cook until browned and cooked through, about 10 minutes, stirring/flipping to cook evenly. If browning too quickly, reduce heat.
Thicken the Sauce:
Move cooked chicken to one side of the pan. Pour sauce into the other side.
Cook and stir sauce until thickened, about 1-2 minutes.
Combine and Serve:
Gently toss chicken with sauce until evenly coated. Cook for 2-3 more minutes over low heat for a sticky coating.
Serve immediately over rice, garnished with chopped green onions and sesame seeds.
