Ingredients
  

  • 1 Piece chicken
  • 1 Clove Garlic minced
  • 1 Piece Lemon juiced and zest grated
  • 2 Tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Fresh parsley, for garnish (optional)

Instructions
 

  • Preheat oven to 375°F (190°C).
  • In a small bowl, combine minced garlic, lemon juice, lemon zest, olive oil, salt, pepper, thyme, rosemary, and oregano to make the marinade.
  • Pat the chicken dry with paper towels and place in a roasting pan.
  • Rub the marinade all over the chicken, both inside and out.
  • Tie the legs together with kitchen twine and tuck the wings under the body.
  • Roast the chicken for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  • Let the chicken rest for 10-15 minutes before carving. Garnish with fresh parsley before serving.
