Ingredients
  

  • 9 cups fresh apples peeled, cored, and chopped into uniform sizes
  • 2 tablespoons lemon juice
  • 3 cups white sugar
  • 2 tablespoons brown sugar
  • 1/2 cup cornstarch
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon coarse sea salt

Instructions
 

  • Prepare Apples: In a large bowl, toss the chopped apples with lemon juice to prevent browning. Set aside.
  • Cook Filling: In a large Dutch oven or saucepan, combine sugars, cornstarch, cinnamon, nutmeg, and salt. Stir in 4 cups of water and bring to a low simmer.
  • Add Apples: Add the prepared apples to the saucepan and return to a low simmer. Cover and cook for 6-10 minutes until apples are tender and the sauce has thickened.
  • Cool: Remove from heat and allow the filling to cool completely before using or storing.

Notes

This recipe yields enough filling for two standard 9-inch pies, making it perfect for batch baking or storing leftovers for future use.
Feel free to customize the spices to suit your taste preferences. You can omit cinnamon and nutmeg and use apple pie spice instead for added convenience.
