Ingredients
  

  • 3 pounds potatoes sliced thin
  • 1 yellow onion sliced thin
  • 2 to 3 tablespoons avocado oil divided
  • 1 teaspoon garlic powder optional
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions
 

  • In a large heavy-bottomed skillet (like a cast iron skillet), add 1 tablespoon of oil over medium heat.
  • Add the sliced onion to the skillet and sauté until caramelized, about 10 minutes.
  • Add another tablespoon of oil to the skillet, then add the sliced potatoes. Let the potatoes sit on the bottom of the skillet for about 5 minutes.
  • Using a spatula, flip the potatoes often to help them brown evenly. Continue cooking until the potatoes are cooked through, about 20 minutes in total. Add the remaining tablespoon of oil if needed.
  • When the potatoes are almost done, season with garlic powder (if using), salt, and pepper to taste.
  • Serve the fried potatoes and onions immediately as a delicious and comforting side dish.

Notes

Can I Freeze Fried Potatoes and Onions?
While you can freeze fried potatoes and onions, the texture may change slightly upon reheating. To freeze, place cooled potatoes and onions in a freezer-safe container or bag and store in the freezer for up to 3 months. Thaw overnight in the refrigerator before reheating.
