Equipment

  • Large mixing bowl
  • Liquid measuring cup

Ingredients
  

To proof the yeast:

  • 1/2 cup warm whole milk 105-110 degrees F
  • 1 tablespoon instant or active dry yeast
  • 1 teaspoon granulated sugar

To make the dough:

  • 2 cups warm water or milk
  • 1/2 cup melted salted butter
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tablespoon salt
  • 6-7 cups all-purpose flour

Instructions
 

Proof the yeast:

  • In a small bowl or liquid measuring cup, whisk together the warm milk, yeast, and sugar.
  • Let sit for 10 minutes or until bubbly, indicating that the yeast is active.

Prepare the dough:

  • In the bowl of a stand mixer or a large mixing bowl, whisk together the warm water, melted butter, sugar, egg, and salt.
  • Add the bubbly yeast mixture and stir to combine.
  • Attach the dough hook to the stand mixer (if using) and gradually add the flour, one cup at a time, mixing until nearly combined before adding more.
  • Continue adding flour until the dough comes together in a smooth, soft ball and does not stick to the sides of the bowl. The dough should be smooth and slightly tacky but not overly sticky.
  • Place the dough in a large lightly greased bowl and cover with plastic wrap or a clean kitchen towel.
  • Let the dough rise in a warm spot until doubled in size, about 1.5 hours.

Shape and bake the rolls:

  • Once the dough has doubled in size, punch it down and divide it into 20-24 portions.
  • Shape each portion into a round roll, smoothing the top and pinching the seam at the bottom to create a smooth surface.
  • Place the rolls in two lightly greased 9x13-inch baking dishes, spacing them evenly.
  • Cover the baking dishes with plastic wrap or a clean kitchen towel and let the rolls rise in a warm spot for 30 to 90 minutes, or until doubled in size.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Once the rolls have doubled in size, bake them in the preheated oven for 15-20 minutes, or until light golden brown.
  • Brush the warm rolls with melted butter, if desired.
  • Serve the homemade dinner rolls warm and enjoy!

Notes

Proofing the Yeast: While not required for instant yeast, proofing ensures that the yeast is active and helps create a light and airy texture in the rolls.
Kneading the Dough: Whether using a stand mixer or kneading by hand, gradually add flour until the dough comes together in a smooth, soft ball. Avoid adding too much flour, as it can result in dense rolls.
Rising Time: Allow the dough to rise in a warm spot until doubled in size. This may take about 1.5 hours, depending on the temperature of your kitchen.
