Ingredients
  

  • Homemade Apple Pie Filling or 1(21 ounce can apple pie filling)
  • 6 8 inch flour tortillas
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1/2 cup water

Instructions
 

  • Preheat Oven: Preheat the oven to 350°F.
  • Prepare Baking Dish: Butter a 9 x 13 inch baking dish to prevent sticking.
  • Soften Tortillas: Soften the tortillas in the microwave if needed to make them easier to roll.
  • Fill and Roll: Spoon about one heaping 1/4 cup of apple pie filling slightly off the center of each tortilla. Sprinkle evenly with ground cinnamon. Roll tortillas up and place seam side down in the prepared baking dish.
  • Prepare Sauce: In a medium saucepan, bring butter, white sugar, brown sugar, and water to a boil. Reduce heat and simmer for 3 minutes, stirring constantly.
  • Pour Sauce: Pour the sauce over the enchiladas in the baking dish. Sprinkle with extra cinnamon on top if desired and let stand for 45 minutes to allow the flavors to meld.
  • Bake: Bake in the preheated oven for 20 minutes, or until golden and bubbly.
  • Serve: Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, and top with desired amount of caramel sauce.
